Blueberry Burst apple Waffles

 

Yields: 4-6 waffles Prep time: 20 minutes Cook time: 20-25 minutes

Ingredients:

  • For the waffles:

    • 1 3/4 cups all-purpose flour

    • 2 teaspoons baking powder

    • 1/2 teaspoon baking soda

    • 1/4 teaspoon salt

    • 1 teaspoon ground cinnamon

    • 1/4 teaspoon ground nutmeg  

    • 1 3/4 cups milk

    • 1/2 cup unsalted butter, melted

    • 1 large egg

    • 1 tablespoon vanilla extract

    • 1 large apple, peeled, cored, and diced

  • For the blueberry sauce:

    • 1 cup fresh or frozen blueberries

    • 1/4 cup water

    • 3 tablespoons sugar

    • 2 tablespoon lemon juice

Equipment:

  • Waffle iron

  • Two large bowls

  • Small saucepan

Instructions:

  1. Blueberry sauce magic: In a small saucepan, combine the blueberries, water, sugar, and lemon juice. Bring to a simmer and cook, stirring occasionally, until the blueberries burst and the sauce thickens slightly, about 5-7 minutes. Set aside to cool. This vibrant sauce will be the star of the show!

  2. Waffle batter time: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In another bowl, whisk together the milk, melted butter, egg, and vanilla.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix!

  5. Gently fold in the diced apples. Each bite will be filled with sweet and tender apple pieces.

  6. Waffle iron action: Heat your waffle iron according to the manufacturer's instructions. Once it's nice and hot, pour the batter onto the iron.

  7. Cook those golden wonders: Cook until golden brown and crispy, about 3-5 minutes. Your kitchen will be filled with the most amazing aroma!

  8. Time to enjoy: Carefully remove the waffles from the iron and place them on a plate. Top with a generous amount of that beautiful blueberry sauce. Add a dollop of whipped cream or a sprinkle of powdered sugar if you're feeling fancy.
