Cucumber Salad with tomato

 

This salad is all about the sauce! It's a simple combination of honey, lime, and chili flakes that adds a sweet, tangy, and spicy kick to the fresh cucumbers and tomatoes.

Ingredients:

  • 2 cucumbers, thinly sliced

  • 2 cups cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/4 cup chopped fresh cilantro

  • For the dressing:

    • 1/4 cup olive oil

    • 2 tablespoons lime juice

    • 2 tablespoons honey

    • 1/2 teaspoon red pepper flakes

    • Salt and pepper to taste

Instructions:

Prepare the salad:

  1. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, and cilantro.

Make the dressing:

  1. In a small bowl or jar, whisk together the olive oil, lime juice, honey, red pepper flakes, salt, and pepper until well combined.

Dress the salad:

  1. Pour the dressing over the salad and toss gently to coat.

Chill and serve:

  1. For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes before serving.
